How old is your dd? Are you already doing any kind of narration or copywork? Do you use lapbooks? (Lapbooks, if you don't know, are collections of info kids can organize in a file folder - check out Homeschoolshare.com for examples)

I'm also not sure how to begin. I am just homeschooling during the summer to supplement their curriculum and keep them from getting bored.
Do you print out a bunch of the templates and let them choose? I feel like I'm spending hours AND HOURS of planning to create a big ol' mess! We are starting with Egypt and then will probably move to the Great Wall and then Mt. Rushmore. My girls are 8 and almost 7. Their IQs are very high (130's) and if I don't keep them directed projects can quickly spin out of control!

We have a great set of pages for Ancient History. We should have Mt. Rushmore in our USA Memorials, Monuments, & Parks pages. For your case, I would just print pages as you go. Have these sets available on your computer so they can pick out pages that match the topics they want to write about.
